I know how painful the social aspects of the disease can be and how frustrating it is. I've learned about living gluten-free the hard way... By living it...

... It's a lot more than gluten-free cooking or telling waiters and waitresses that you can't eat anything with wheat, barley or rye (and maybe oats) in it...



... lt's a lot more than reading a book called "Living Gluten-Free for Dummies" or "Gluten-Free Cooking for Dummies"...

I’ve gone through a lot to learn what I know about living with the disease in a gluten-filled world. If you are willing, I'd like to share some

Here's my story...



... I'm a homemaker, so I've been the cook in my family for most of my adult life. It's a job I love but cooking gluten-y and non-gluten-y meals at the same time presents some very unique challenges.



I want to share some of what I know with you. Perhaps it will make it a little easier for you to cope with the disease than it was for me.



To do that, I've written 6 articles about how to go about preparing food for both gluten intolerant and non-gluten disease afflicted individuals in your home at the same time.



I'll share with you what you can do to make a meal that is both tasty and healthy and which, hopefully, everyone in your family will enjoy... no matter what their gluten status might be.



It really isn't too hard to do that if you go about it the right way. And, that's what I'm going to be talking about.



In the 11 years since I was diagnosed with celiac disease/gluten intolerance, I've discovered a lot of things that many celiac-challenged people aren't aware of that will help to make meals the enjoyable and close sharing times they are meant to be... not complaint sessions to whine about the food.



Here's the titles and what I will be covering in the 6 articles:



1. Get into your right mind... Your mindset isn't everything but it's a lot.

2. Food selection.................. How to identify and avoid foods that are likely to be contaminated with gluten substances.

3. Storage............................. How to store your foods so that you don't accidently contaminate the gluten-free items.

4. Planning............................ How to plan great meals that are easy to make.

5. Preparation........................ How to prepare your meals without contaminating the gluten-free portion of what you are serving.

6. Dealing with leftovers........ How to manage leftovers so accidents don't happen.



Getting The Right Mindset



The first thing that you will need to deal with is getting the right mind set. When I first started to try to deal with my gluten intolerance problem I was discouraged that my family wasn't willing to "hang-in there with me" and share my pain. Don't let that happen to you...



... It will get better. Your family members will grow and so will you!



My first few attempts to serve gluten-free food to my family didn't turn out very well. It wasn't too long before the "H" word (hate) was being freely expressed about the gluten-free food I was preparing.



They wanted nothing to do with my gluten-free cooking and weren't afraid to announce that sentiment. It was an especially hard time for me because one of my biggest pleasures in life has always been the sharing... sharing good times... sharing togetherness... sharing food.



Even if I weren’t the cook, I’d still miss being able to share a plate of our favorite cookies with my kids, or split a pizza with my husband, or chat over coffee and donuts with my friends.



But being the cook just made it that much harder. Now, not only did I have to cook for myself... I still had to cook for them, too... without contaminating my food with "their" gluten.



You need to recognize that some of the things that you will eat will not be particularly appetizing to your family or friends. And, sometimes they will not pull any punches when they tell you about it, either.



Don't take it personally...



... Remember, you are in a wheat-based culture, where they don't have your problem and have very little understanding of what you go through when you eat food with gluten in it.



Never forget that you are avoiding pain and discomfort... your family and friends aren't.

They aren't motivated to learn to like the things which don't contain wheat, barley or rye. I suggest that you let them try a taste, and when they discover they actually like some of the things that you fix for yourself, take note and keep on going!



In the next article, I'm going to talk about how to identify and avoid foods that are likely to be contaminated with gluten.

Eat flowers!

Good enough to eat

We are all familiar with vegetable flowers in the form of Cauliflower, Broccoli and Artichokes, but other, more ornamental flowers have been used in the cuisine of cultures all over the world for thousands of years. The Romans were keen on them, as were the ancient Chinese, and European medieval writings talk about feasts of venison cooked with marigolds and violets in salads.



Using peppery Nasturtium flowers in salads and sweet, perfumed rose petals in desserts is quite well known, but did you also know:



• The young shoots of Hostas are good spinach alternative – Hostakopita is a Greek spinach pie made with hosta shoots and in Japan nori maki sushi is filled with parboiled hosta shoots marinated in soy sauce, sugar & salt. They can also be steamed like asparagus. Only use young shoots though as older leaves are too tough.



• Hemerocallis – Day Lily – the flowers and buds have a sweet nutty flavour and look pretty in salads. (Don’t use other types of lilies though as they are poisonous!)



• Violets & Pansies – the sweet, fragrant flowers can be used in salads, desserts and drinks and can be crystallised for cake decoration.



• Sunflowers – we all know you can eat the seeds, but did you know you can also eat the buds & petals? The petals have a bitter-sweet taste and can be used in salads. The unopened buds can be steamed and have a flavour similar to artichokes.



• Lilac – the flowers have a floral, slightly lemony flavour and can be used in salads.



• Honeysuckle – the flowers have a sweet honey flavour and can be used as a garnish for salads and desserts. (Don’t eat the berries though as they are poisonous).



• Fuchsias – the vibrant flowers look great as a garnish.



• Campanula – the narrow leaves make a sweet addition to salads.



• Yucca – the white flowers have a thick and crunchy texture and a sweet flavour. Be careful of the spines at the tips of the leaves when picking though!



• Typha – Reed Mace – the young shoots taste similar to water chestnuts and the rhizome can be eaten raw or cooked, or dried and ground into flour!



• Even the humble Daisies and Dandelions in your lawn can be picked and used as garnishes.



N.B. It’s fun to use some of these more unusual edible garden plants, but do be careful you are sure what they are, as so many of our common garden plants are in fact poisonous. If in doubt, leave it out!



Also, never use insecticides or chemicals on plants you may want to eat, and make sure you wash them carefully first – not least to get rid of the creepy-crawlies!

Losing Weight with the Right Attitude

Merriam’s -Webster Learner Dictionary defines Attitude as a feeling or way of thinking that affects a person's behavior.



You may have thought about the exercise and diet when planning to lose weight but have you considered the attitude. Research shows that a positive attitude can help strengthen and energize the body and thoughts such as negative thinking, stress and fear have the reverse effect.



However it’s not enough to think positive you must also believe it. Most of us have had past failures but they are just that “past” failures, don’t rehash them and allow them to cast doubt in your mind.



Think positive and visualize how you want to look and soon it will become a reality.



Picture yourself healthy, cut out and place pictures from magazines of healthy bodies where you can see them and post positive quotes around the house and office. For example: “Be not afraid of growing slowly, be afraid only of standing still.” ~Chinese Proverb.



Instead of a diet to lose weight consider living healthier in general. Making healthy eating choices and exercise a regular part of your day will not only help you lose weight it will also help you keep it off.



A daily routine is an effective tool in creating lasting changes in your life. A schedule consisting of exercise and healthy eating will help you achieve your weight loss goals easier. You will start to feel better about yourself making it harder revert back to your old ways.



Consistency is an important element to achieving lasting success in anything but it can be harder to stick with it some days. Create a backup plan for the days that you don’t that can help you get back on your feet and in the game again.



Thinking positive and visualizing how you want your life to be along with a healthy dose of forgiving yourself when you don’t, will lead to a happy healthier you. If you don’t then chances are you’re going to revert back to your old ways and most likely regain what you lost and possibly more.



You can do whatever you put your mind to, you may have heard of that and its true, proven time and time again. Losing weight is no different.



The thing is; if you burn more calories than you eat you’ll lose weight that’s the bottom line so try not to over think it.

Simple Ways Restaurants Can Go Green

In the restaurant industry, wastefulness is all in a day's work. Huge amounts of trash, Styrofoam, and plastic have been part of their operating systems for many years. However, in recent years, the industry is finally beginning to realize that it is time to green up their act. And now, the industry with one of the biggest carbon footprints is slowly making steps to become more green.



Going green doesn't have to be hard, and there are many ways to go about it. Reducing water and electricity consumption is very easy and it doesn't cost any money. In fact, it saves money. Some simple ways to help cut down on water usage are to install flow restrictors on sinks and get low-flow toilets. Flow restrictors limit the amount of water used and can cut down your consumption by thousands, even millions, of gallons. Cutting down on electricity might be a bit more expensive to get going, but it will save you tons of dough in the long run. Furnishing your kitchen with Energy Star appliances (steamers, refrigerators, ovens, broilers, fryers, etc.).) is a great place to start. Many Energy Star appliances use about half as much energy as older models.



Another thing that is fairly simple is to separate the recycling into three different categories: cardboard, glass, and cans. Separating them is important because they are recycled differently and many recycling centers don't separate them correctly.



This last way to go green isn't just about the restaurant, it also involves the customers. Styrofoam to-go containers have ruled the industry and polluted our planet for as long as most of us can remember, but there are now other options! Many restaurants have chosen to go green with their to-go containers by replacing plastic and Styrofoam with more eco-friendly options. Many companies are now helping restaurants go green with their disposable tableware that is compostable and able to biodegrade in a proper composting facility. One material that compostable tableware is commonly made of is bagasse. Bagasse is a byproduct of the sugarcane refining process. It is pretty much what is left after all the liquid is squeezed out of sugarcane.



The United Sates has nearly one million restaurants. The average restaurant produces 100,000 pounds of trash per year. It would make a huge difference even if the only change restaurants made was from Styrofoam to compostable to-go containers. Going green is now easier than ever, and there is no time like the present. Happy greening!
